Three kinds. The soft kind comes packed two ways, wrapped similarly to butter and in plastic cups. The kind in plastic cups is even more smeary. Also, all kinds are further differentiated by the percentage of fat. Low-fat quark is lousy, IMHO.)<br />I guess some not salty kind of white cheese could work, too. Shred finely on a shredder/grater/whatever you call the thing.<br />People do that to pasta (originally noodles) here as well - both the quark and the ground poppy seeds. It's a sweet dish then.
